Chard with Prawn Omelet and Toasted Bread

Chard with Prawn Omelet

Ingredients

  • 1 kg Chard
  • 2 Clove of Garlic
  • 400 g Frozen shrimp, peeled
  • 4 Medium-sized Egg
  • 4 Medium sliced Whole wheat sliced bread
  • 2 Tbsp Olive oil

Preparation

  1. Separate the chard leaves from the stem, chop everything into short strips and cook in boiling water.
  2. Once the chard is boiled, drain it and run it under cold water.
  3. Fry the garlic cloves in a large pan with the oil. Once golden, sauté the prawns.
  4. Add the chard leaves and stems and the lightly beaten eggs.
  5. Stir the mix and serve with one slice of toasted bread per person.
