Aubergine Omelet

Ingredients
- 1 Medium-sized aubergine
- 2 Tbsp Olive oil
- 5 Medium-sized Egg
Preparation
- Wash the aubergine and cut it into slices that are not too thick.
- Heat a tablespoon of oil in a pan or griddle and grill the aubergines for 15-20 minutes. Drain any liquid that is released.
- Add a tablespoon of oil, stir it well and then the beaten eggs. Wait until they set and turn over. Serve hot.
