  • 1 Medium-sized aubergine
  • 2 Tbsp Olive oil
  • 5 Medium-sized Egg


  1. Wash the aubergine and cut it into slices that are not too thick.
  2. Heat a tablespoon of oil in a pan or griddle and grill the aubergines for 15-20 minutes. Drain any liquid that is released.
  3. Add a tablespoon of oil, stir it well and then the beaten eggs. Wait until they set and turn over. Serve hot.
