Prawn and Wild Asparagus Omelet

Ingredients
- 800 g Green asparagus
- 4 Tbsp Olive oil
- 1 Clove of Garlic
- 10 Large Shrimp
- 4 Medium-sized Egg
- 2 Stick Parsley
Preparation
- Cut the asparagus and discard everything but the most tender parts. Sauté with the chopped garlic in a pan with 3 tablespoons of oil.
- When tender, add the peeled prawns and sauté a few seconds.
- Beat the eggs in a bowl, add the asparagus and prawn mix, well strained, and the chopped parsley.
- Heat a tablespoon of oil in a pan and cook the omelet. Serve hot.
