Prawn and Wild Asparagus Omelet

Ingredients

  • 800 g Green asparagus
  • 4 Tbsp Olive oil
  • 1 Clove of Garlic
  • 10 Large Shrimp
  • 4 Medium-sized Egg
  • 2 Stick Parsley

Preparation

  1. Cut the asparagus and discard everything but the most tender parts. Sauté with the chopped garlic in a pan with 3 tablespoons of oil.
  2. When tender, add the peeled prawns and sauté a few seconds.
  3. Beat the eggs in a bowl, add the asparagus and prawn mix, well strained, and the chopped parsley.
  4. Heat a tablespoon of oil in a pan and cook the omelet. Serve hot.
