Couscous with Vegetables and Pine Nuts

Ingredients

  • 1 Medium-sized Carrot
  • 1 Medium-sized Leek
  • 1 Medium-sized Onion
  • 2 Medium-sized Artichoke
  • 150 g Mushroom
  • 500 g Cauliflower
  • 1 Tbsp Olive oil
  • 5 Tbsp Peeled pine nut
  • 1.5 Cup Wheat semolina (for couscous)

Preparation

  1. Finely dice all the vegetables and sauté them all together in a pot with a tablespoon of oil.
  2. When the vegetables are cooked, add the pine nuts and couscous. Brown lightly and add two glasses of hot water.
  3. Cook and when the couscous is done, let stand 5 minutes before serving.
