Mix the crushed clove of garlic, soy sauce and two tablespoons of olive oil. Divide and thread the pork sirloin, the apples and the shiitake mushrooms between metal skewers.
Cook the kebabs in a non-stick pan, turning them over and cooking them over the entire surface with two tablespoons of oil.
Serve the kebabs with an apple compote. To make the sauce, peel an apple and boil it in pieces with four tablespoons water over low heat with a pinch of stevia. Boil it until it is tender and then crush it.
Finally, serve the kebabs with the apple compote accompaniment.
